These cookies are so easy to make and they taste great too! You can adjust the sugar amount or if you are trying to make healthier sugar choices, no worries! Try using coconut sugar, or cane sugar, I suspect beet sugar would work too. Just stay away from the sugar-alternatives – stevia, aspartame, etc. Those won’t work. And the same goes with the peanut butter. I personally like chunky peanut butter, so that’s what I used. I have since made this recipe and I tried it with almond butter and cashew butter! Both were fantastic. These cookies are definitely a great gluten-free snack – and can be a healthy protein source at the same time. Go on and get baking!
