Chocolate Covered Cheesecake Bites
This chocolate covered cheesecake bites recipe is the perfect combination of cheesecake and chocolate, for a dessert recipe that is extremely irresistible! You will love the combination of the creamy, tangy cheesecake that is cut into bite sized pieces and then dipped into melted semi-sweet chocolate. This is a great dessert recipe to serve at parties and get-togethers. It does take a bit of prep time, but it is worth the work, you'll want to make enough because they are sure to go quickly. Some of the ingredients you will need for this chocolate recipe include graham cracker crumbs, melted unsalted butter, softened cream cheese, sour cream, sugar and eggs. You will also need vanilla extract, semi-sweet chocolate chips, and coconut oil.
To start this delicious cheesecake recipe, you will need to preheat the oven to 350 degrees Fahrenheit, and line an 8-inch baking pan with some aluminum foil. Then spray with some non-stick cooking spray. Then combine the graham cracker crumbs and melted butter in a small bowl. The texture of these recipe ingredients should be like wet sand. Then spread the graham cracker mixture into the prepared pan, and bake for approximately 5 to 6 minutes or until golden brown. Then take the crust out of the oven and let it cool completely. You'll want to leave the oven on, and begin to assemble the cheesecake filling. For the cheesecake filling recipe beat the cream cheese in a stand mixer with the paddle attachment, add the sour cream, eggs, sugar, and vanilla. Mix until combined, and make sure to scrape the sides of the bowl. Then pour the cheesecake mixture on top of the graham cracker crust.
Then place in the oven and bake for approximately 35 to 40 minutes or until the cheesecake is set. Allow the cheesecake to cool completely and freeze overnight or for at least a few hours to harden. When you lift the frozen cheesecake out of the pan, you can peel away the aluminum foil.
Then with a sharp knife cut the cheesecake into squares. If the cheesecake squares become too soft, you will want to freeze until they are chilled. Then melt the chocolate and the coconut oil in a microwaveable bowl until the chocolate is melted and smooth. Then dip the cheesecake squares, one at a time into the melted chocolate, letting the excess chocolate drip off. Then place the squares onto a baking sheet that is lined with parchment paper. Repeat the steps with the rest of the cheesecake bites. Then you want to place the cheesecake bites into the refrigerator to set.
